When being intolerent isn’t so bad

This afternoon/evening I attended the wedding of a friend, and it was truly beautiful.  But, to be perfectly honest, the highlight of my night was being told by my bestie that she’d made a cake just for me so I didn’t miss out (and that’s on top of making the actual wedding cake too!).  I’m not going to lie, I nearly cried (tears of joy).  I am so lucky to have a friend who is so thoughtful and mindful of my food intolerances.  And I definitely stuffed my face with cupcake as soon as I got home.

Love you

Honey Caramel Popcorn

I think we can all agree that this time of year is crazy!  And perhaps from time to time we forget to eat a “real meal” because we’re just so busy.  Don’t feel bad though, I definitely ate some (A LOT) of this popcorn for lunch.  It all balances out if you eat a salad for dinner…. right?

Lemon Curd Meringue Stacks

Saturdays are for spending time with best friends, for baking, for watching silly tv shows, and for relaxing in the sunshine.  Sadly though, sometimes on Saturdays, some of us have to work.  Actually, more often that not, I have to work Saturdays.  So having these kind of Saturdays to look forward to, gets me through the rest of them.

Key Lime Pie

I’m ready for summer.  I never thought thought I’d hear myself say those words.  I’m a winter person.  Weird, I know.  But right now, in this moment, I can’t wait to put on my summer dresses and sit in the sunshine while sipping Rekorderlig cider.  But in the mean time I’ll settle for this pie.

This pie is the perfect transition between winter and summer.  It’s a pie, so you think winter right?  But it’s totally more like a cheesecake.  A citrus-ey, deliciously sweet, cheesecake pie.

One bite of this and you’ll be instantly transported to a place where the weather and is warmer and the sun shines all day.  Well, not really, but it certainly will get you in the mood for summer.

Happiness is… Chocolate Chip Cookies

Some days are hard.  Really hard.  So hard that all you want to do is curl up in a ball and cry.  And it’s okay to have a bit of a cry and get it out, but you can’t do that forever.
Sometimes you have to put it all aside for a day, and let yourself enjoy the good things.  Save the worrying for tomorrow… today I’m going to focus on happy thoughts!

Like beautiful flowers that come out for the spring sun.

And home grown herbs.

Loving pets.

And cookies.  Chocolate Chip Cookies to be exact.

Flourless Chocolate Cake

Let’s start with something everyone loves,  chocolate cake!

Yes, it’s undeniably ugly.  This one doesn’t come out all “pretty”.  It rises wayyyy up in the oven, and then sinks right down when you pull it out.  Some would look at that as a cake disaster, I look at that as an opportunity to smother the cake with chocolate frosting and strawberries.  All that “ugliness” will disappear, and no one will ever know.  Unless you tell them of course.  But really, why would you?  It can be our little secret.

Or just cut it up and eat it.  Sometimes I just can’t wait that long.

Just look at that gooey chocolatey goodness oozing out.
